Notes from Boston Lobster Roll

What always makes a great roll, in my opinion, is the lobster meat. When it’s fresh-as-can-be, it makes a world of difference in the texture and taste. Frozen meat can be a little rubbery, while fresh meat is more tender.

Another important aspect is the bun. The traditional split top hotdog bun is what many are used to. More and more places are using a brioche bun though. It holds up better with larger rolls, and its buttery sweetness pairs well with lobster. Having the bun buttered and toasted is always a good thing. 

For cold rolls, or “Maine-style”, the amount of mayonnaise is the key. When there’s too much, it takes away from the flavor and texture of the meat. 

Many spots mix in greens with their cold roll — celery, chives, bed of lettuce, or shredded lettuce. Occasionally, you’ll even get a roll with two greens. I’m not a fan of too many greens, too much crunch. 

When it comes to hot rolls, or “Connecticut-style”, butter served on the side is crucial. I have found that if the butter is poured on for you, by the time it gets to your table, the butter soaks into the bun. This can make the bun soggy, and cause the roll to fall apart. 

Besides the lobster meat itself, I think less is more with a great roll.
